I can't tell you much about Vegas dealer schools but I can tell you that the casino industry has undergone a massive downturn in business in the last couple of years, Vegas included, due to the economy. Casinos are laying off department-wide everywhere. I would do careful research into the odds of gainful employment before I invested money and time into schooling.
